Burrito Bowl

Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1/4 cup of water
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup canned corn kernels
  • 1 tablespoon lemon juice
  • 1 cup microwavable brown rice
  • 1/4 cup chopped cilantro
  • 4 cups chopped romaine lettuce
  • 1/2 cup of your choice of cheese
  • 2 ripe avocados, sliced
  • 1/2 cup salsa
  • 4 tablespoons sour cream
  1. In a saucepan, cook the beans, water, chili powder, cumin, salt, corn, and lemon juice on medium heat for 5-10 minutes.
  2. Cook the rice according to package instructions, and stir with cilantro.
  3. Add the rice and beans to a bowl with the lettuce, avocados and cheese, and top with salsa and sour cream.
  4. Enjoy!
