Ingredients:
- 1 can of black beans, drained and rinsed
- 1/4 cup of water
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 cup canned corn kernels
- 1 tablespoon lemon juice
- 1 cup microwavable brown rice
- 1/4 cup chopped cilantro
- 4 cups chopped romaine lettuce
- 1/2 cup of your choice of cheese
- 2 ripe avocados, sliced
- 1/2 cup salsa
- 4 tablespoons sour cream
- In a saucepan, cook the beans, water, chili powder, cumin, salt, corn, and lemon juice on medium heat for 5-10 minutes.
- Cook the rice according to package instructions, and stir with cilantro.
- Add the rice and beans to a bowl with the lettuce, avocados and cheese, and top with salsa and sour cream.
