
Ingredients:
- 2 pieces of salmon
- 1/4 cup honey
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- 1 cup quinoa
- 1 can of corn kernels
- 1/2 onion, diced
- 1/4 cup chopped basil
- 2 tablespoons vinegar
- Preheat oven to 350F
- In a bowl, mix the honey, olive oil, garlic, salt, and pepper. Coat both sides of the salmon with the mixture.
- Bake the salmon for 15-20 minutes.
- Prepare quinoa according to package instructions
- Cook the corn, onions, and basil, in the oil for several minutes.
- Put the quinoa in a bowl. Top with the prepared salmon, oil, vinegar, salt and pepper, and corn mixture.
